What is Maitake Mushroom?

Grifola frondosa, also known as Maitake mushroom, is a polypore mushroom that grows at the bases of trees in clusters. Maitake mushroom tends to grow particularly on oak trees and is found during the late summer and early autumn. Grifola frondosa is typically found in northeastern regions of Japan and North America and is a prized mushroom in Traditional Chinese and Japanese herbology. It was believed that maitake mushroom can help balance the body and bring altered body systems back to a healthy level.* In fact, many people find Grifola frondosa mushrooms delicious. Modern mushroom enthusiasts learned how to cook maitake mushrooms and how to make a maitake mushroom recipe since they are known to be succulent and chewy with an earthy and spicy taste when cooked.

The fruiting body of Grifola frondosa can grow to as large as 100cm and consists of a cluster of multiple grayish-brown caps that are spoon-shaped with wavy edges and typically 2-7 cm wide. The underside of maitake mushroom caps have about one to three pores per millimeter and the white colored stalk has branch like structure that becomes tough as the Grifola frondosa grows. Maitake mushroom’s unique shape has lent it nicknames such as hen-of-the-woods, ram's head and sheep's head mushroom.

Additionally, some interesting discoveries were made when looking into Griflola frondosa interactions with AMPA receptors. Maitake mushroom behaved as an agonist to AMPA receptors, thus promoting healthy emotional outlook. Maitake mushroom contains a specific type of beta glucan known as Proteo-β-glucan, which is believed to be responsible for these effects.

Studies investigating Maitake mushroom health benefits discovered that a maitake mushroom supplement promoted immune health as well as cellular health when orally ingested. This research sparked more investigations on maitake mushroom benefits all over the world.
